EXTRANEOUS MATTER ANALYSIS

Market Survey: PASTA

Seven Macaroni/Noodle products were purchased at random.
The Brands are Ronzoni; Grand Union; Mullers; Mendocino Pasta Co, CA; Imported Italy-Grand Union; Imported Italy, DaVinci; New World Pasta, PA
We included one egg noodle product and two imported macaroni products. No statistical significance is claimed. Common sense dictates that it would be very unlikely to analyze one poor product in such a small market sample. A Pasta-Imported survey from 11/01 is also online.

Results on 225-gram (about 1/2 pound) sample using AOAC extraction procedures:

Rigatoni 129 insect fragments
1 thrip skin
1 whole insect - weevil larva

Rainbow Twirls 36 insect fragments

Spaghetti-5 80 insect fragments
1 Rodent Hair (7 mm)

Garlic and Herb Spaghetti

11 insect fragments

Wide Egg Noodles 6 insect fragments
1 Rodent Hair (6 mm)
1 whole insect - mite

Spaghetti-8 16 insect fragments
1 whole insect - mite

Angel Hair 4 insect fragments

Opinion:
The above results only represent a snapshot of extraneous matter levels in the market. The insect fragments for the most part are from pests associated with flour sanitation. They are weevil, tribolium, lesser grain beetle, and flour moth. Macaroni is produced using semolina flour. Semolina is a high quality four milled from the heart of the wheat kernel. For this reason semolina flour has a history of very low insect fragment counts. Any rodent hair longer than 3 mm is generally considered to be a post-processing contamination.
